I've always enjoyed the urban fantasy genre, much more so than typical fantasy. A few of my favorites:
1) The Grimnoir Chronicles - Larry Correia
2) Monster Hunter International - Larry Correia
3) The Dresden Files - Jim Butcher
4) The Iron Druid Chronicles - Kevin Hearne (started off excellent, but kinda jumped the shark at the end)
5) The Mistborn Series - Brandon Sanderson (still working my way through this series, but awesome thus far)

The Wheel of Time Series by Robert Jordan. The first few books were the best and it gets a bit tedious in the middle. mainly because there are just so many characters and story lines interweaving with each other. The last 2 books in the series (after Robert Jordan died) gets refreshing again with a different author to close out the series.

Haven't read much fantasy, but I'll throw in "The First Law" series by Joe abercormbie. Great grimdark series with a lot of humour and interesting characters.

Kushiel's Dart by Jacqueline Carey, really the entire Kushiel's Legacy series. She is such a wonderful writer.

I'm a big fan of the Artemis Fowl series and the Percy Jackson series. Even though they're targeted towards younger people,.they are still great reads

I like a lot of medieval/non modern age type adventure fantasy books so if you are into that, I recommend --
Joe Abercrombie's series such as the "Shattered Sea" trilogy and "The First Law" trilogy.
NOT ALLOWED's "The Faithful and the Fallen" series.
Michael J Sullivan's "The Legend of the First Empire" series that continues (chronologically) to his Riyria series.

If you're more into magic type fantasy, I found V.E. Shwab's "Shade of Magic" series and Lev Grossman's "Magician" series a good read.
The "Magician" series gave me some Harry Potter nostalgia but with a lot less innocence and a lot more complex story [Also, it takes place in a more modern period (I didn't say they would ALL be non modern time periods kappa)].
There's a lot more i would recommend but I couldn't think of on the top of my head but if you want more, give me a message lol.

Faith Hunter at the moment, the Soulwood Series.

Before that, the Marnie Baranuik series by A.J. Aalto - if you like your heroines potty mouthed, permanently horny (are women really that horny all the time or is this just certain types of fictional heroines) highly intelligent but slightly ditsy and mad-capped. Darynda Jones' 'Charley Davidson' series is also a fine example.
