I love to bake. I have an excellent cookie recipe and you only need four ingredients:

1 Large Egg
1 Stick of Unsalted Butter
1 TBSP of Water (if needed)
1 Box of Krusteaz Snickerdoodle Cookie Mix

Mix ingredients following instructions on the box. Bake following instructions on the box. Eat any which way you want to.

The instructions on the box are also great for Sugar Cookies, Pecan Bars, Banana Nut Bread and Oatmeal Raisin cookies.

My favorite -- and my kids' favorite -- is Ritz cracker chicken. Beat an egg, dip chicken pieces in egg, salt and pepper to taste, roll in crushed Ritz crackers, place on cookie sheet, dot with butter, bake at 375 until done. Yummy!

I always found bread baking a lot scary. Which is ridiculous because I LOVE fresh bread. I'm not a neophyte in the kitchen, but bread scares the daylights out of me. I don't know why. You should know that I always manage to, if not ruin, leave a lot to be desired results with frozen dough. No matter how well I follow the instructions on the box. Or bag.

Which brings me to my question: Are bread machines any good? I hear very mixed opinions about them, from people I know. I thought I'd ask perfect strangers and get a better sampling of answers.

I love to bake. I bake pies and cakes, but I love to bake "quesadas", a Spanish cheesecake-alike.
Here are the ingredients:

7 ounces of ricotta cheese (you can use yoghurt instead)
2 eggs
5 T of unsalted butter at room temperature
1 C sugar
1 C flour
2 t lemon zest
2 C whole milk
1 t vanilla extract
Pinch of salt

And, here are the instructions:

1. First, heat the oven to 350°F (180°C)
2. In a medium bowl add butter and sugar and cream
3. Next, whisk in eggs and vanilla
4. Add ricotta and a pinch of salt and beat well
5. Stir in the milk and beat in the flour little by little
6. Last, add in the lemon zest
7. In a 9×13 inch baking dish add the mixture
8. Bake the quesada pasiega for 35 to 45 minutes
9. When it is brown on top and a toothpick comes out clean it is ready
10. Cool the quesada pasiega before eating and enjoy either plain or with some jam.

i love baking too... i bake cakes, breads, pastries, etc... i try everything i can... but now since i'm working don't have that much time to bake anymore.. i missed baking... T.T

urgh, i don't have a fave though coz i bake depends on my mood of the day, you know.. it varies depends on my mood...

I love baking but unfortunately can't afford the calories as I like my own stuff way too much so I mostly now just read my "food porn". I mostly did Bundt cakes because I am not a great cake decorator and cookies of all kinds. Several times, I've gone all out during the winter holiday season and baked up an enormous variety of cookies which I then packaged for friends and co-workers - that was a lot of fun.

Regarding bread baking - it's really not difficult at all. A bread machine simplifies it but also limits the size of the breads. My father used his bread machine (a gift from me) to mix, knead and proof but then would bake it in the oven. A Kitchenaid mixer (and every baker deserves one) will do an excellent job of kneading - and if you want a work out, you can even do the kneading yourself - I used to bake bread occasionally in college and kneaded by hand.

I have access to excellent bread of all kinds where I live so I'm not really motivated to bake bread.

I'm not much of a pie person - am not handy with rolling out uniform crusts :-)

OMG, talk about bread baking and kneading the dough yourself.... nowadays we have the mixer to knead the dough (i use a spiral mixer at home, very big one, takes a lot of space LOL) but in the old days, when i was a kid, i remember having to help my mom to knead the dough, for like, a long time! and then we have to let the bread rise for hours! back then, we don't have instant yeast like we do now, so took a long time to wait for the dough to rise.. nowadays, even without the proofer the dough will rise really fast on normal days... but i don't bake breads during the rainy days, because the dough just won't rise as much as i want them too... and i don't have one of those proofer machine at home... :p

Loath store bought sweets, desserts and cakes....

and I make my own bread every 2nd day.
My elderly neighbour and I bake and trade half each when we get a new recipe :)

Ohhhhh i am SO jealous of you! it is my dream to be able to bake daily and trade with my neighbors...

but since working i haven't got the time to bake.. working and betting stuck in traffic jam everyday (3-4 hours daily on average) makes me so tired i don't have the motivation to bake anymore during the weekends... T.T

how i wish i win a lottery or something so i wouldn't need to work anymore to pay my bills and so i can bake as frequent as i want to.. *sigh*
