Hi! Is there anyone willing to share his/her favorite Spanish recipes?

I will start with something sweet: a quesada pasiega (a sort of cheesecake), typical from Cantabria, a region in Northern Spain.

Here are the ingredients:

7 ounces of ricotta cheese (you can use yoghurt instead)
2 eggs
5 T of unsalted butter at room temperature
1 C sugar
1 C flour
2 t lemon zest
2 C whole milk
1 t vanilla extract
Pinch of salt

And, here are the instructions:

1. First, heat the oven to 350°F (180°C)
2. In a medium bowl add butter and sugar and cream
3. Next, whisk in eggs and vanilla
4. Add ricotta and a pinch of salt and beat well
5. Stir in the milk and beat in the flour little by little
6. Last, add in the lemon zest
7. In a 9×13 inch baking dish add the mixture
8. Bake the quesada pasiega for 35 to 45 minutes
9. When it is brown on top and a toothpick comes out clean it is ready
10. Cool the quesada pasiega before eating and enjoy either plain or with some jam.

I like spicy food, so I guess spanish would be fgreat for me? But I don´t know how to cock it :(

Hi! If you like spicy Spanish foods, try the dish called "Patatas bravas":

Ingredients:

5 large potatoes
1 teaspoon paprika
1 tablespoon Extra Virgin olive oil
1 teaspoon Ground cumin
2 garlic cloves, Mashed
chilli pepper or cayenne pepper to taste
200 ml Tomate Frito/ Passata/ tomato Sauce
3 tablespoons Mayonnaise
1 tablespoon white wine vinegar
salt to taste

Instructions:

Peel the potatoes and then boil until cooked (about 10 minutes). Drain and then cut into cubes. Sauté in olive oil (preheated) on the pan until the potatoes are browned and crunchy. In a separate bowl, mix the rest of the ingredients to make the sauce. Heat the sauce in a pan for 3 minutes, and serve the sauce separately for dipping. Sprinkle the potatoes with a bit of salt.
