While recruiters want you to know that if you LIE on your job application or resume that you will automatically be disqualified and/or later fired from your job. This is not true for the most part. However, they can rarely check on past job performance because they can't reach those companies. Sure they might ask for supervisors but you can simply say, "They have all left that company."

This is a hard fact to question as companies often have functional job titles so this is easy to justify to an interviewer.
Companies cannot check what you actually did in a company either. For example while you might have been a project manager tasked with coordinating projects, writing budgets, and making interviews and the job is for a software programmer (a former love of yours), you can easily change the tasks and activities to what a software programmer should be doing. Again, there is no easy way to check this information. All you have to do is to study up on software programming activities in a typical job.
