Scarlet Hyacinth did a series called Deadly Mates that explored mythological monsters like Typhon and Echidna as well as bringing in dragon shifters towards the end of the series. I think there were 5 or 6 books in the series.
Now, Lisa Oliver also brought in dragon shifters in the fifth and final book of her Stockton Wolves series, called Tell Me the Truth. And in her Cloverleah pack spinoff series called The Gods Made Me Do It, she features such mythological beings as Poseidon, Nereus and Thanatos.
For other non-standard shifters, Charlie Richards has a series call Gargoyle of Culchulain and several years back Siren had a multi-author series called Midnight Matings, written by Joyee Flynn, Stormy Glenn and Gabrielle Evans that went wild with unusual shifter types - penguins, mice, phoenixes, unicorns, elephants and rhinos, etc

Check out the King's Command series by Stormy Glenn and Olivia Black. The first book is called Highland Heart. There are 5 books, and they are really good.
