Courses are basically HTML pages sent by the server upon API requests, so webscraping should be possible with a premium account (but a bit tricky because you'll have to perform some sort of MITM, like with HttpCanary, because those are HTTPS requests)

The application allows to download several courses to use them offline, when you are premium. Would it be possible to download all the courses using a premium account, and then export downloaded data so that they can be used in a modified APK?
