anced is not root (and work and seams to block YT on Play...)
Revanced is still in its early stage so I'll prefer stable over beta anyday.
For the issue that you're facing. Follow below mentioned methods :
1) You can use
https://forum.xda-developers.com/t/magisk-module-systemless-debloater-replace.4180083/ and debloat YouTube app. Using Vanced manager install rooted version, then playstore won't update the app.
2) you can use hidemyapplist xposed module and hide YouTube from playstore so it won't update.
