Would I be able to update the quickoffice suite that came with my htc phone with this version? Or would it be wise to try to uninstall it first, in order not to have 2 versions hogging my internal memory?

It wouldnt update my preinstalled one so I had to remove it (the preinstalled) if you have root then Titanium backup removes preinstalled apps quite nicely.

You have to import it (.csv) into a spreadsheet, works fine for me that way.

Quick Question! I have an Motorola Cliq XT that is unlocked, but not rooted. Can I install the QuickOffice Connect Mobile Suite, or do I need to root my phone first? Secondly, if I do need to root my phone, where can I find some good instructions on the internet on how to do that? Thanks!

You can install it without root.
To Root head on over to M3 (modmymoto) and go to the Cliq XT / Quench forum.
